The term quality for food products covers a number of different components: nutritional, sanitary and organoleptic quality. The food sector therefore acts on these three essential dimensions of quality.

In the world of events, which are ephemeral by nature, nutritional quality is not the most sought-after criterion. Nevertheless, for a special event, such as catering for athletes at the Olympic Games, we can work specifically on nutritional criteria to create a great taste experience.

At Fleur de Mets Réceptions, guaranteeing the sanitary quality of our products is a top priority. Our commitment to strict standards and rigorous controls guarantees an exceptional culinary experience, without compromising the health and satisfaction of our guests.

The sanitary quality of Fleur de Mets products is guaranteed by analyses (products, surfaces and hands), an automated refrigeration system and unannounced inspections by an outside firm. Fleur de Mets was inspected by official services in 2023: The level of hygiene was assessed as “Very Satisfactory”.

Let’s talk about the organoleptic quality of products. Organoleptic qualities are defined as anything that can excite a sensory receptor. Thus, a food’s appearance, smell, taste, texture or consistency constitute its organoleptic qualities.

The organoleptic quality of products is the alpha and omega of a successful culinary experience and an exceptional moment, whether it’s gastronomic or family cuisine. Ingredient selection criteria

At Fleur de Mets, we have strictly defined our selection criteria for our product ranges. These criteria are subject to annual improvement targets. In consultation with the requirements of the Chefs and the Production Manager, the Purchasing Manager selects the suppliers and ensures that the defined criteria are respected and monitored.

Seasonal products

It’s a prerequisite for responsible, tasty cooking!

Two menus, Autumn-Winter and Spring-Summer, are created each year by our chefs. This allows us to create gastronomic experiences in harmony with nature, taking advantage of the best of each season. Fresh produce, local products and organic produce all follow the same rule of respect for seasonality.

Local produce

Local origin is an important criterion in our purchasing to guarantee a high level of product quality, but also for environmental reasons.

We have defined two criteria: products of French origin and products less than 200 km from our production kitchens.

Today, 100% of our meat comes from France, 100% of our poultry from Normandy, 100% of our dairy products from Normandy, and 100% of our eggs from Ile de France. A full range of market garden produce (herbs, sprouts, edible flowers, as well as our honey) comes from a neighboring farm 4 km away. We are constantly improving our purchasing on these two locality criteria in order to provide quality services for our customers’ professional events.

In France and Europe, official logos are used to recognize products that have been awarded an official sign of quality and origin. There are four European quality signs:

Protected Designation of Origin (PDO), Protected Geographical Indication (PGI), Traditional Speciality Guaranteed (TSG), Organic Farming and a national label: Label Rouge.

There are also a number of government-supervised endorsements, such as High Environmental Value (HVE).

At Fleur de Mets, we prefer to buy labelled products whenever possible.

Our champagnes are “HVE”, our bread and flour “Label Rouge”, for example.

Fleur de Mets cuisine is based on the principle of moderate use of salt, sugar and animal fats. The gustatory quality of the products and the chefs’ years of experience must therefore compensate for the reduction in these products, which are also flavor enhancers, to reinvent a healthier cuisine with pronounced tastes. Preparation techniques are essential to sublimate ingredients and create delicious dishes. Precise cutting of vegetables, fruit or fish ensures even cooking and attractive presentation. Marinating infuses flavors and tenderizes meats. Steaming preserves the texture and nutrients of foods, while cooking over high heat creates striking aromas. Finally, the combination of flavors and textures is essential to awaken the taste buds.
