Why favor the “reasoned” offers of your eco-responsible caterer?

We are more used to talking about the number of calories in our meals than about their impact on climate change … However, food represents 22% of the carbon footprint of our total consumption, it is the 3 poste most emitting position of greenhouse gases, after transport (30%) and housing (23%) (source our-environment.govt).

 

To respond to the concern of climate change, to make concrete our efforts and our commitments in this field, and to take on board our customers, we have created the REASONED COCKTAILS. What is a Fleur de Mets REASONED COCKTAIL? First of all, this is not a punishment!
Conventionally, the composition of a Flower cocktail of Dishes with or without animation, includes 60% vegetable pieces, and 40% pieces (or mini dishes) based on meat and fish. A REASONED COCKTAIL is a cocktail in which the most CO2 emitting products (beef, some large fish, chocolate …) are replaced by others, while maintaining a balance of variety and of course, culinary emotions. This is not a 100% vegetarian cocktail, (an offer that also exists on the menu), but a more chosen service, more “flexitarian”, more responsible, which does not exclude meat or seafood products, but in reduced proportion and choosing for example a piece of poultry to replace a piece of beef.

 

With this technique of “communicating vases” we calculated carbon footprint differences ranging from minus 26% to minus 42% according to our cocktail offers.

The battle for less carbonated and healthier cocktails and menus is being played out on a rebalancing of proportions but started long before, in the kitchen.

 

Less salt, less sugar, less animal fats (highly emitting GHGs) help to found the new bases of a contemporary cuisine, healthier, less carbonated where taste is a Holy Grail which is conquered by audacity and a certain form of renaissance of culinary practices (fermentation, germination, extraction, emulsion …). There is no sobriety in this culinary approach, but on the contrary, new, powerful, lively tastes that challenge and delight.
