Diner Wax, what about ?

A performance dinner using beeswax, imagined by Olivier Darné, artist and founder of the artistic collective Parti Poétique.

Less is more. Because we believe that luxury also lies in a form of simplicity and purity, we have chosen to share a performance, arty and singular dinner to celebrate our 20th anniversary.

A DINER WAX, a manifesto for responsible gastronomy, driven by the power of the symbol of wax and bees, for the preservation of biodiversity, resources and the environment.

With the table bare, guests are invited to sit down. A fluttering tablecloth is delicately laid. The master of ceremonies pours a ladleful of liquid beeswax in front of each guest. Organic, fragrant, blond, the wax congeals, the plate is there, the senses are awakened, the tone is set.

This is followed by a succession of “sequences”, gastronomic proposals in the DNA of the house.

Composed by Olivier Darné and Fleur de Mets chef Philippe Saillard, the menu features no meat, but a succession of delicacies straight from the sea and the nearby garden.

Gravewax of smoked fish (encapsulated in wax and finely sliced in front of guests), fresh oysters with bottarga, a velvet of herbs and flowers, grilled & smoked early leek…

To accompany turbot with roasted squash, we suggest a taut, mineral Junmai sake.

Honey invites itself into the dessert, with a dry Hydromel evocative of thyme, rosemary and cut grass.

To round off the meal, fresh from the oven, a honey and propolis puff pastry is served with infusions from the garden…

A “low-carbon” menu, which is important to us, and whose vegetables, herbs, flowers and honey come directly from the vegetable garden and beehives of Zone Sensible Ferme Urbaine de Saint-Denis, our neighbor and friend.

Soliciting the senses, creating emotion and pleasure, sharing a singular moment that reflects us was our wish and our desire.

The 4 elements, local produce from the Zone Sensible urban farm in St Denis, the poetry of the Parti Poétique, beeswax, the plant-based cuisine of Fleur de Mets and the simplicity of gestures and materials create a singular, unforgettable and responsible experience.

Dressing a table with beeswax, backstage at a wax dinner.

The natural beeswax loaves become liquid at 70 degrees. The hollow containers are molded onto a balloon and demolded a few seconds later, when the cooled wax has set.

The plates are ladled directly onto the moistened tablecloth in front of each guest.

Vegetables, sprouts, herbs, flowers and honey come from the kitchen garden and beehives of Parti Poétique at Zone sensible Ferme urbaine de Saint-Denis, located just a stone’s throw from our production kitchen.
